Ingredients (Serves 4)

  • ½ cup raw almonds
  • 8 long celery stalks, leaves separated and reserved, tough fibers peeled off with a vegetable peeler, sliced on the diagonal into ¼-inch thick pieces
  • 6 dates, pitted and coarsely chopped
  • 3 tablespoons fresh lemon juice
  • Kosher salt and freshly ground black pepper
  • 2 ounces Parmigiano-Reggiano cheese (about ⅓ cup), shaved into thin pieces with a vegetable peeler
  • ¼ cup extra-virgin olive oil
  • Red pepper flakes to taste

Instructions

  1. Preheat oven to 350°F. Spread almonds on a small rimmed baking sheet and toast, stirring occasionally, until golden brown and fragrant, about 8–10 minutes. Remove from oven and let cool completely, then coarsely chop.
  2. While almonds are cooling, prepare the celery. Use a vegetable peeler to remove any tough outer fibers from the celery stalks. Slice the stalks on the diagonal into ¼-inch thick pieces. Separate and reserve the tender inner leaves.
  3. Place the sliced celery in a large bowl of ice water and soak for about 20 minutes to heighten the crispness. Drain the celery and gently pat it dry with a tea towel or clean kitchen cloth.
  4. Transfer the dried celery to a medium serving bowl. Add the reserved celery leaves, chopped almonds, chopped dates, and fresh lemon juice.
  5. Season generously with kosher salt (start with ¼ teaspoon) and freshly ground black pepper. Toss gently to combine all ingredients.
  6. Add the shaved Parmesan and extra-virgin olive oil, and toss gently again. Taste and adjust seasonings as needed, adding more salt, pepper, lemon juice, or red pepper flakes until the flavors are balanced (sweet, salty, peppery, tart).
  7. Serve immediately at room temperature, or chill and serve cold. If preparing ahead, cover and refrigerate for up to 3 days. Before serving, toss again and drain off any excess liquid that's accumulated.

About celery selection: Choose firm, unblemished celery with pale, tender inner leaves. Avoid any that's wilted or browning at the base. The inner leaves are more tender and milder than outer leaves—they're essential to this salad.
