Spicy Seared Ahi Salad with Sesame Ginger Dressing
Spicy Seared Ahi Tuna Salad
Restaurant-quality in minutes. Honors what you catch.
When you (or your favorite fisher-person) brings home fresh tuna, this is the recipe that honors what you've caught. A quick sear, a sesame-ginger glaze, and you've got something that tastes restaurant-quality but is actually ridiculously simple.
The magic is in the contrast: a beautiful golden-brown crust of black and white sesame seeds on the outside, buttery-rare tuna on the inside. The sesame-ginger dressing—creamy, complex, utterly addictive—ties everything together. Serve it over fresh greens, pair it with Thai Cucumber Salad on the side and steamed rice, and you've got an elegant dinner that makes it look like you spent your whole evening on it. You didn't. The whole thing takes minutes.
This is the recipe that reminds you why fresh, quality fish matters. You can taste the difference. It's worth waiting for your next catch to make this.
Why This Recipe
It's genuinely fast. From prep to plate in about 20 minutes. No complicated techniques. Just good tuna, good heat, and confidence.
Quality fish actually shines here. There's nowhere to hide. Fresh tuna tastes completely different from frozen, and this recipe makes that crystal clear. It's worth waiting for the good catch.
The contrast is everything. Warm seared exterior, cool rare center. Creamy dressing against fresh greens. Sesame-ginger heat balanced by lime brightness. Every element matters.
It feels special without being precious. This tastes like something you'd order at a nice restaurant. But it's actually straightforward enough that anyone can pull it off.
About the Local Ingredients
🍣 The Tuna
The ahi tuna needs to be fresh-caught (ideally that day or the day before), kept cold, and safe to eat raw. An 8-ounce steak feeds two people beautifully.
🧂 The Sesame & Spice Coating
Black and white sesame seeds create visual contrast and nutty flavor. Crushed red pepper adds gentle heat—adjust to your preference. The coating is what creates that beautiful crust on the outside while the inside stays rare and buttery.
🥣 The Sesame-Ginger Dressing
Toasted sesame oil, rice vinegar, tahini, fresh ginger, and garlic create a dressing that's rich but balanced. This is what makes the dish. Don't skip it or substitute it. It's addictive.
Pro Tips
- Pat the tuna completely dry before coating. Moisture prevents the sesame seeds from sticking and the crust from forming properly. Use paper towels and press gently.
- Make sure your pan is screaming hot. You need high heat to create that golden crust in 45 seconds per side. The tuna should sizzle immediately when it hits the pan.
- Don't move the tuna while it's searing. Let it sit and develop that crust. Flip only once, halfway through.
- The inside should be rare and cool in the center. This is not a medium-rare fish dish. You're aiming for seared exterior, buttery-rare interior. If you're nervous, use a thermometer: aim for 110-115°F internal temp.
- Make the dressing ahead. It tastes better when the flavors have time to marry. It also keeps in the fridge for several days.
- Slice the tuna against the grain. This makes it more tender and more beautiful on the plate. Slice thick enough to maintain that rare center.
Recipe
Ingredients
For the Tuna:
- 8 ounce fresh ahi tuna steak
- 1 tablespoon black sesame seeds
- 1 tablespoon white sesame seeds
- 1 teaspoon crushed red pepper (adjust to taste)
- Himalayan pink salt or kosher salt
- 1 teaspoon coconut oil (or other high-heat oil)
For the Sesame-Ginger Dressing (makes ½ cup):
- ¼ cup plus 1 tablespoon rice vinegar (or yuzu rice vinegar)
- ¼ cup toasted sesame oil
- 1½ tablespoons tahini paste
- 1 tablespoon honey
- 1 large clove garlic, finely minced
- 1 teaspoon fresh ginger, peeled and finely minced
- ½ teaspoon kosher salt
For the Salad:
- 4 cups organic mixed greens (spring greens and baby spinach blend)
- 2–3 tablespoons shelled edamame (optional)
- 3 tablespoons diced red bell pepper (optional)
- Fresh lime for finishing (optional)
Instructions
- Make the dressing: Whisk together rice vinegar, sesame oil, tahini, honey, garlic, ginger, and salt until smooth and emulsified. Set aside.
- Pat the tuna dry completely with paper towels. Season both sides generously with salt.
- In a small bowl, combine black sesame seeds, white sesame seeds, and crushed red pepper.
- Using your hands, coat both sides of the tuna steak with the sesame mixture, pressing gently so it adheres well.
- Heat a non-stick skillet over high heat until very hot. Add coconut oil and heat until it shimmers.
- Carefully place the sesame-coated tuna in the pan. Do not move it. Sear for exactly 45 seconds.
- Flip the tuna and sear the other side for another 45 seconds. (You're aiming for a golden crust on the outside and rare/cool on the inside.)
- Remove tuna to a cutting board and let rest for 2 minutes.
- In a bowl, toss the mixed greens with a small amount of sesame-ginger dressing (about 2 tablespoons). Divide between two plates.
- Slice the tuna against the grain into ¼-inch thick slices. Arrange over the greens.
- Serve with extra dressing on the side for dipping. Finish with fresh lime juice if desired.
