This is one of my favorite cookie recipes! Don't worry about key limes—the regular ones that are abundant here in Panamá work just as well.
They're soft, chewy, tropical-tasting, and done in under 30 minutes. Kids love rolling them in powdered sugar, and they disappear fast once they're baked. The cream cheese is the secret—it's what gives them that perfect chewy texture instead of being cake-like or crispy.

The original recipe calls for key limes, but seriously—don't stress. Use the regular limes that are abundant and cheap at any market here. You'll need about 2 limes for zest. They deliver the same tropical brightness and lime punch. The flavor comes from the zest, not the juice, so don't add more juice just because you're using different limes. Use zest if you want more lime flavor.
🧈 Full-Fat Cream Cheese
This matters. Full-fat cream cheese is what makes these cookies soft and chewy. Low-fat will give you a drier, cake-like result. Don't substitute. Room temperature is also crucial—leave it on the counter for 30–45 minutes before you start.
🥥 Sweetened Coconut Flakes
The coconut adds texture and tropical depth. Use your favorite brand of sweetened coconut flakes—the kind from the baking aisle work fine. This brings the whole flavor profile together.
🍳 Room Temperature Egg
The egg also needs time on the counter (about 30–45 minutes) to reach room temperature. This helps the dough come together smoothly without temperature shocks that could cause separation or uneven mixing.
Pro Tips
- Use a cookie scoop. A cookie scoop ensures all cookies are the same size, so they bake evenly. No overcooked edges, no underbaked centers.
- Don't overwork the dough. Once you add the flour, switch to a rubber spatula and mix only until combined. Overmixing creates tough cookies. Stop as soon as you don't see dry flour pockets.
- Timing is everything. Bake for 11–12 minutes. They should look slightly underdone when you pull them out—they continue to set as they cool. This is what gives you that soft, chewy center.
- Zest first, juice second. If you want more lime flavor, add zest from another lime. The zest is where the flavor is. More juice will just make the dough wetter and throw off your ratios.

- 1/2 teaspoon salt
- 1 cup white granulated sugar
- 3 oz cream cheese (room temperature, cut into small pieces)
- 2 regular limes, zest only
- 1/2 cup unsalted butter (melted and still warm)
- 1 large egg (room temperature)
- 1 tablespoon whole milk
- 1 tablespoon fresh lime juice
- 1/2 cup powdered sugar (for rolling cookies)
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Place sugar, cream cheese, and lime zest in a large bowl.
- Pour warm butter over sugar and cream cheese and whisk until everything is combined and smooth.
- Add egg, milk, and lime juice. Whisk well until everything is fully incorporated.
- Add flour, salt, baking soda, baking powder, and coconut flakes. Mix with a rubber spatula until just combined. Don't overmix—stop as soon as there are no dry flour pockets.
- Use a cookie scoop to portion equal amounts of dough. Gently roll each portion into a ball.
- Place the dough balls into a bowl with powdered sugar and roll gently until lightly coated on all sides.
- Place the coated cookies on the prepared baking sheet about 2 inches apart.
- Bake for 11–12 minutes. The cookies should be set but still soft. Don't overbake or they'll lose their chewiness.
